Thank you to all my friends who convinced me the Instant Pot. I use it multiple times a week. I guess you can say I'm really liking it. It is probably my single favorite kitchen appliance ever!
Recently I was able to successfully convert my typical Chicken Wild Rice recipe to work for the Instant Pot! It was just as good as when I make it on the stove top or in the slow cooker.
I wanted to share so you can make it too.
Use the saute mode add 1/4 cup of butter, 3/4 cup wild rice blend, 3 TBSP sliced almonds, 1 chopped onion, 3 stalks stalks of celery chopped, 2 carrots peeled and chopped, and 1/2 a package of mushrooms sliced. Saute until the onion is soft. Add 2 - 2 1/2 cups of chicken broth ( I make my own), 2 large cooked chicken breasts chopped. Season to taste with salt + pepper. Closed the lid, set to manual for 30 minutes, let the pressure natural release. Add 1 cup of heavy whipping cream at the end stir and serve.
