Easy Oatmeal Bars

It's hard to find an easy grab and go breakfast that is healthy and filling.

It is so easy to stop at the nearest coffee shop, bakery, or dare I say it gas station or convenience store to grab a box of donuts on the way to our homeschool co-op. I found myself falling into this trap more often than not. They kids weren't full for long and soon the cries of "I'm hungry" came pouring in.

When I first came home from working full time I dove head first into making everything I could from scratch. The more kids we had the harder it was to squeeze in the time to do it all. I was more and more tempted to go for the convenience foods. Now that my youngest is 2 I am feeling like I have more time to get back to focusing on what we are putting into our bodies and preparing more things from scratch again.

I suppose you're ready to get to the reason you're here, am I right? Here's one way to prepare an easy grab and go breakfast. If your're into batch cooking go ahead and double the recipe and freeze some of these for the next time you need them. Who doesnt need a time saver?
Oatmeal Bars
Preheat the oven to 350 degrees.
4 cups of dry quick cook oats
1 1/2 cups of flour
1 1/2 cups of sugar
1 tsp of cinnamon
1/2 tsp. Salt
3/4 cup melted coconut oil (can be substituted for melted butter or fractionated coconut oil)
3 TBSP Ground Flax Seed
9 TBSP water
1 1/2 cups dried cranberries or raisins
Mix all the ingredients in a large bowl or mixer. Pour into a 13x9 pan and press it down flat. Bake for 20-25 minutes. Cut into squares after its cooled.
I have added chopped nuts and chocolate chips to change things up a bit.
